Amy, I love the name!! It made me laugh!
So here's the recipe for the Cafe Rio pork, that I've kinda made up through trial and error! I just had heard that they use Coke, so I started from there. Feel free to add what you want, but this is what I do:
Put the boneless pork in the crock pot the night before, and just cook it on low all night. (you could also do this in the morning) Don't add anything at this point.
When it's cooked all the way through, I drain all of the juices and cut off all of the fat. (sometimes there are big chunks)
Then I add about a cup of Coke or a cup and 1/2, a small can of green chilies, a cup or so of Brown sugar, some salt, pepper, onion powder, and garlic powder. Just add what you want until you like the taste.
The meat should easily shred at this point. Mix everything in and let simmer. You can eat it right away, or let it simmer on low for a few hours.
